I don’t know what it’s looking like in your neck of the woods… But here in the Northeast its pretty Spring like lately. So has Spring Sprung?? Except the brief times when Mother Nature has a bit of a bipolar moment, its been very mild and quite Spring like for some time. One might say we barely had any winter, which for a snow lover like myself is a bit sad, but there is always next year.
For now though, its basically Springtime and its time to enjoy all that goes with that, Spring flowers, anticipation of planting seasons, and cookout weather. Around here that also means a Spring and Summer of cool and refreshing desserts.

I’m going to share one of my families favorite cool and refreshing desserts and BONUS! its quick and easy with no oven or cooking required! That makes this the perfect summer dessert in my book. Easy Shamrock Pie is a cool, easy pie loaded with flavor and very simple to make. It essentially my version of the old favorite Kool Aid pie just with more flavor and punch.
This pie is so versatile and can be made in literally any flavor you choose. If you can find it, you can make it! So no matter what your flavor preference is , if they make the flavor in the unsweetened Kool-Aid, you can make it in this pie.
